Fish is one of the fundamental ingredients of the island's gastronomy, giving rise to very traditional dishes such as wreckfish with shrimp, dentex, comber-fish with almonds, dried shark-meat and meager-fish cannelloni.
Meat also has a privileged place in the Tenerife's cuisine. Some of the most representative dishes of the island are rabbit in "salmorejo" sauce, "baifo en adobo" (marinated roast goat), roast chicken in banana cream and chicken giblets Guimanero-style.
The "papas arrugadas" (literally, wrinkly potatoes) are very characteristic of the whole region and are served with spicy "mojo picón", a pungent mixture of olive oil and spices.
Some of the most typical desserts of the island are "frangollo" (toasted maize and dried fruits), "quesillo" (Canarian-style crème caramel) and "bienmesabe" made from honey and almonds.
